Growning up in rural Nebraska, we had very full days on the farm. Kristy's family and my (Mike) family both were multi-generation run family farms. When breakfast was on the table it consisted of eggs, bacon or sausage, toast or pancakes, and plenty more. My mom made buckwheat pancakes that made a lasting fond memory for me. Creating this Buckwheat Pancake Mix was more for me than Kristy to bring back the delicious pancakes that I remember. We use the leftovers, toasting them to make bacon egg and cheese griddle cake sandwiches. Eat, enjoy, excel! Ingredients that you add: 2 eggs, 2-1/4 cups of water. Mix ingredients include: buckwheat flour, sorghum and tapioca flours, grade A sweet buttermilk powder, molasses powder, natural flavorings.
